An easy way to have a different soup every day is to keep a large pot of rich stock in the fridge. When you are up to the fresh soup of the day, simply take some stock, boil ingredients of choice in the stock and your healthy and tasty soup is ready. Here is a practical example how to get by for 1 week.

Example for soup of the day for 1 week.

Monday: stock, canned tomato, potatoes pieces, courgette pieces, parsley chopped.

Tuesday: stock, soba noodles, some boiled meat, boiled egg sliced on half, soy sauce to taste.

Wednesday: stock, pumpkin, coconut milk, curry to taste. Pure the soup.

Thursday: stock, sunchokes, potatoes, black pepper. Pure the soup.

Friday: stock, canned tomato, chickpeas, courgettes, cucumbers, chilly.

Saturday: stock, barley, any available mushrooms, fried sliced onion, thyme & black pepper.

Sunday: stock, split pea, onion, black pepper.
